Preheat the oven to 200C and line a baking tray with tin foil. Cut each potato into eight slices and add to a large mixing bowl.
Add the Vindaloo to the bowl of potatoes a long with the oil and mix well until evenly covered. Place the wedges onto the prepared baking tray and season with salt.
Place in the oven and bake for 25 - 25 minutes, turning the wedges half way through. Make sure the wedges are cooked through before serving and enjoy!
