Celebrate St. David’s Day with a classic Welsh recipe!
Combine the milk and linseed together, set aside for 15 minutes or longer.
Add the flour, margarine, sugar, baking powder and salt to a large mixing bowl, rub together using your fingers until a breadcrumb mixture forms. Tip in the sultanas, mix with a spoon then gently stir in the linseed mixture to form a dough ball.
Lightly dust a clean work surface with flour, roll out the dough until it's 0.75cm thick. Cut out rounds using a cutter. Grease a griddle pan or frying pan with margarine, place over a medium heat and cook the welsh cakes for 2 to 3 minutes on each side or until golden brown.
Sprinkle with sugar and serve!
