Vegan Pumpkin Spice Pancakes

Combine the worlds most popular breakfast food with everyone’s favourite flavours and you’ve got yourself these pumpkin spice pancakes!


  • In jug, combine the milk and lemon juice and leave. In a large mixing bowl combine the pumpkin puree, butter, syrup, sugar and vanilla. Add the milk and lemon mixture and stir.

  • Add the flour, baking soda, baking powder, salt and spices and combine. Add a splash of milk if too thick, if too thin add more flour. Let the batter rest for 5 to 10 minutes.

  • Oil a frying pan, add some pancake batter and cook on each side until golden brown.
