Combine the worlds most popular breakfast food with everyone’s favourite flavours and you’ve got yourself these pumpkin spice pancakes!
In jug, combine the milk and lemon juice and leave. In a large mixing bowl combine the pumpkin puree, butter, syrup, sugar and vanilla. Add the milk and lemon mixture and stir.
Add the flour, baking soda, baking powder, salt and spices and combine. Add a splash of milk if too thick, if too thin add more flour. Let the batter rest for 5 to 10 minutes.
Oil a frying pan, add some pancake batter and cook on each side until golden brown.
