Vegan Festive Jam Biscuits

These easy vegan friendly biscuits take no time at all to whip up and make the perfect Christmas gift!


  • In a large mixing bowl, cream together the butter and sugar until smooth.

  • Add the flour a little at a time while mixing to form a smooth dough. Knead the dough and roll into a ball. Wrap in clingfilm and chill for 20 to 30 minutes.

  • Preheat the oven to 180C and line a baking tray with baking paper. Once chilled, roll out the dough (1/2cm thick) and cut out cookie shapes. Use a small Christmas cookie cutter to cut out the centre of half of the cookies.

  • Place the biscuits on to the prepared baking tray and bake for 10 to 15 minutes (turn half way through baking). Once slightly golden the biscuits should be done.

  • Leave to cool before adding half a teaspoon of raspberry jam to each full biscuit and top with a cut out centre cookie to create a sandwich.
