Vegan Chocolate Chip Cookies

Ah the classic chocolate chip cookie… Crispy edges, chewy middle, loaded with chocolate chips and vegan friendly!

Instructions

  • Preheat the oven to 180C and line two baking trays with baking paper.

  • Add the vegan butter and sugars to a large mixing bowl and mix until fluffy then whisk in the vanilla and milk.

  • Sift the flour, baking powder and cornstarch into the bowl, mix until combined then fold in the chocolate chips.

  • Divide the dough into eight equal pieces and roll each into a ball. Place them on the prepared baking trays with enough space between each cookie and slightly flatten.

  • Bake for 10 - 12 minutes or until golden brown (make sure you don't overbake!) Leave to cool and enjoy.
