Combine the flavours of South Asia with the taste of Italy with this vegan chicken tikka pizza!
Dissolve yeast in water in a large bowl and let sit for about five minutes until it starts to bubble. Add salt, oil and flour and mix until dough forms. Turn out onto lightly floured surface and knead for about five minutes. Grease a large bowl with oil and put dough inside then cover with a towel or plastic wrap. Place bowl in a warm place to rice until doubled in size.
Sauté the garlic, onion and chicken pieces with oil over medium-high heat in a large skillet until the onions are browned. Reduce the heat, add the tomato sauce, tikka masala and salt and mix. Simmer uncovered for about 10 minutes.
Pre-heat the oven to 200C. When the pizza dough has doubled in size, divide into four or six pieces. Dust pans or pizza stone with cornmeal and spread dough balls on top. Spoon the tikka masala mixture onto each piece and top with mozzarella cheese. Bake for 18-20 minutes or until edges of crust are golden and centre is done.
