The great thing about muffins? They can be sweet or savoury! Today we’re heading down the savoury route with these cheesy courgette muffins that just so happen to be 100% vegan!
Preheat the oven to 220C and line a muffin tin with 4 muffins cases.
In a large mixing bowl, combine the flour, baking powder, salt, garlic powder, paprika, crushed chillies and black pepper.
Tip in the milk, mustard, butter, grated courgette, onion and vegan cheese and mix. Spoon the batter into the muffin cases and bake for around 20 - 23 minutes or until golden brown.
