Spring Green Salad

Eat your greens with this avocado, cucumber and broccoli salad!


  • Bring water to boil in a medium pot (enough to cover the eggs). Carefully add the eggs, cover and boil for a minute then turn off the heat. Leave the eggs to sit in the water for 20 - 25 minutes.

  • Peel and dice the eggs and add them to a mixing bowl a long with the cucumber, avocado and broccoli.

  • In a bowl, combine the mayo, paprika and salt. Spoon into the salad and toss to coat. Season with pepper to serve.
