Smashed Sweet Potato Toast

We are slightly obsessed with this lunch… What’s great about this delicious recipe is you can switch it up depending on the seasons (we highly recommend smashed pumpkin for autumn!)


  • Preheat the oven to 220C, prick the sweet potato with a fork and bake for 40 minutes. Leave to cool, remove the skin and use a fork to mash the sweet potato. Mix in the tahini and spread on to the toast and top with acovado slices, sunflower seeds, rocket and salt and pepper.
