Shakshouka is a Maghrebi dish of eggs poached in a sauce of tomatoes, olive oil, peppers, onion and garlic and quite frankly, it’s de-lish!

  • Heat olive oil in a pan over a medium heat and sauté the onions. Tip in the bell pepper and stir.

  • Add the garlic and green pepper, sprinkle in the paprika, turmeric and chili powder, stir and cook for 1 minute.

  • Spoon in the tomatoes and break down using a spoon then season with salt and pepper.

  • Use a spoon to make small wells in the sauce, crack the eggs into the wells, cover the pan and cook for 5 - 8 minutes or until the eggs are done.

  • Garnish with cilantro or parsley and crumble feta cheese on top to serve.
