Throw any root vegetable into this dish, toss in a simple homemade dressing and top with a poached egg and you’re ready to rock ‘n roll!
Preheat the oven to 200C, heat one tablespoon of of oil in a frying pan, add the veg and season with crushed chillies, salt and pepper. Cook for 5 minutes until the edges begin to brown then transfer to the oven and roast for 20 - 25 minutes until tender.
Place the dressing ingredients into a bowl and whisk together. Taste and season with salt.
Serve the veg tossed in the dressing with poached eggs on top!
