These roast veg fajitas are a flavoursome way of getting more veg in your diet!
In a jug, mix together the oil and fajita spice blend.
Prep the veg and place in a large mixing bowl. Pour over the seasoning and mix to coat.
Roast the veg in a preheated 200C oven for around 20 minutes, or until the vegetables have softened and browned.
Pack the veg into tortillas with some salsa or your favourite condiment, serve and enjoy!
