Pop some rocket into a bowl, drizzle with oil, lemon juice, season with salt and pepper and toss gently.
Heat a teaspoon of oil in a pan, crack in the eggs, cook for 2 minutes, cover and cook for a further 2 minutes or until the whites are set. Remove from the heat.
Combine 1/4 teaspoon of salt with the ricotta and mix in the Parmesan and thyme. Toast the bread, spread the cheese mixture on to the toasted bread, top with rocket and finally add a boiled egg. Season with salt and pepper to serve.
