Quinoa Sushi Rolls

Swap the white rice for healthy quinoa in these quinoa sushi rolls, the perfect healthy lunch!


  • Pop the quinoa and water in a saucepan over a high heat, bring to a boil, lower the heat and cover. Simmer until the quinoa is mostly cooked through (around 15 to 20 minutes).

  • In a small saucepan, combine the rice vinegar, honey and salt, bring to a simmer and keep warm until the quinoa is ready. Pour the vinegar mixture on to the quinoa, stir and cover leaving the quinoa to absorb the liquid. Remove the quinoa from the heat and leave to cool.


  • Mix together the sauce ingredients in a bowl, taste and add additional honey if desired. Place in the fridge until ready to serve.

  • Lay the seaweed sheets shiny side down, spread quinoa on top, add the avocado, cucumber, carrots, cress and spinach leaves.

  • Tightly roll the wraps pressing the edges together to seal (use some water to seal the wraps if needed). Serve with the dipping sauce and enjoy!
