Pumpkin season calls for a classic cream soda with a twist…
Add the sugar and water to a saucepan over a medium heat until the sugar dissolves. Add the pumpkin puree and spices and stir until combined but do not boil. Remove from the heat and leave to cool for 20 minutes.
Strain the mixture through a sieve and add 25ml to each glass, top with sparkling water and whipped cream.
