Plant-Based Plum Galette
Instructions
Pastry

In a mixing bowl, rub the flour, salt, sugar and butter together. Add the cold water and mix until a dough comes together.

Knead the dough fir a minute, wrap in clingfilm and place in the fridge for 30 minutes.
Filling

Slice the plums into slivers and roll out the dough onto baking paper. Preheat the oven to 200C.

Sprinkle the almond flour onto the centre of the dough leaving a 2 inch empty edge. Sprinkle the sugar onto the dough and arrange the plum slices on top.
Topping

Fold the edges of the dough over the plums, sprinkle with sugar and brush the pastry and plums with a butter, sugar and jam mixture.

Bake for 50 - 60 minutes or until golden brown.
