Celebrate Earth Day with these plant-based cookies!
Preheat oven to 175 degrees, line 2 baking trays with baking paper and sift the flour, baking soda, and salt into a bowl.
In a separate bowl, cream the sugar and butter together then add the vanilla extract. Stir in the flour mixture and add the coconut milk 1 tablespoon at a time until a dough comes together. Place in the fridge for 30 minutes to chill.
Divide prepared cookie dough in half and place in separate mixing bowls. To each bowl, add desired amount of food colouring. Use a kneading motion to work the colour into the dough, adding more as needed, until desired colour is achieved.
Roll together 1 teaspoon each of green and blue dough into a ball and place on the prepared baking tray with enough space between each cookie and bake for 10 minutes.
