Plant-Based Earth Day Cookies 🌎

Celebrate Earth Day with these plant-based cookies!


  • Preheat oven to 175 degrees, line 2 baking trays with baking paper and sift the flour, baking soda, and salt into a bowl.

  • In a separate bowl, cream the sugar and butter together then add the vanilla extract. Stir in the flour mixture and add the coconut milk 1 tablespoon at a time until a dough comes together. Place in the fridge for 30 minutes to chill.

  • Divide prepared cookie dough in half and place in separate mixing bowls. To each bowl, add desired amount of food colouring. Use a kneading motion to work the colour into the dough, adding more as needed, until desired colour is achieved.

  • Roll together 1 teaspoon each of green and blue dough into a ball and place on the prepared baking tray with enough space between each cookie and bake for 10 minutes.
