Beat the summer heat with a refreshing glass of peached iced tea!
Bring the water to a boil, steep the rooibos tea in the water for 5 minutes, strain and leave to cool. Once cool, pop in the fridge until completely cool.
In a saucepan, combine the sugar, water and peaches over a medium - high heat. Bring to a boil, then reduce to a simmer, and cook for 20 minutes, breaking down the peaches. The peaches should be very soft and the liquid should be pink. Leave to cool completely.
Add ice to a glass, fill 3/4 of the way up with tea, add a few tablespoons of peach syrup, top with a splash of sparkling water and garnish with mint... Enjoy!
