Heat a large pot over a medium to high heat, add the water or oil, garlic, shallots, carrots, celery, courgette and bell peppers, season with salt and pepper and stir. Saute for 4 minutes or until tender, add the butter beans and lentils then season with more salt and pepper.
Pour in the vegetable broth, rosemary, mixed spice and paprika and stir. Simmer and leave for 15 to 20 minutes or until the butter beans and lentils are tender. Taste and adjust flavour as desired.
