Nectarine Galette

Homemade pastry filled with fresh nectarines, what’s not to love?!

Instructions

Crust

  • Whisk the flour, salt and sugar together in a mixing bowl, add the cold butter and shortening to the bowl and combine using a fork.

  • Add the ice cold water to the mixture, one tablespoon at a time while mixing with the fork until the dough comes together and is slightly sticky.

  • Gather the dough in to a ball and knead inside the mixing bowl. Gently flatten the dough, wrap in clingfilm and place in the refrigerator for two hours.

  • Remove the dough from the refrigerator, leave to sit at room temperature for 10 minutes, lightly dust a clean work surface with flour and roll out the dough. Preheat the oven to 190C and line a pie dish with baking paper.

  • Line the baking dish with the dough with overlapping the edges.

Filling

  • While the crust is in the refrigerator, slice the nectarines, place in a bowl and stir in the filling ingredients.

  • Place the filling carefully in to the centre of the dough in the pie dish, arrange in a circular pattern. Fold up the sides of the crust onto the fruit, beat an egg and brush on to the pie crust with a pastry brush.

  • Sprinkle the galette with icing sugar, place in the oven for half an our or until golden brown.
