The ultimate comforting family pudding has got to be the humble apple pie… It doesn’t get better than this!
In a large mixing bowl, beat the butter and sugar together. Break in an egg and an egg yolk (keep the white for glazing). Beat together so the mixture resembles scrambled egg (1 minute). Work in the flour a third at a time until the mixture begins to clump together. Work the dough into a ball, wrap in cling film and place in the fridge for 45 minutes.
In a large bowl, combine the sugar, cinnamon and flour.
Heat the oven to 190C or 170C for fan assisted ovens and beat the egg white with a fork in a small bowl. Remove a third of the pastry, wrap back up and roll out the rest of the pastry to around 4cm thickness and use to line a pie dish. Roll the remaining dough out ready to cover the pie.
Tip the apple slices into the cinnamon/sugar mixture and toss so that the apple slices are coated. Pop the apple mixture into the pie dish, brush a little water around the pastry tin and lay the pastry lid on top. Pinch the ends together so the filling doesn't spill out.
Trim the edges and slash the top with a knife so that the steam can escape. Brush the pastry with the egg white, sprinkle with caster sugar and bake for 40 - 45 minutes, until golden. Sprinkle with more sugar to serve.
