Homemade Vegetable Galette

Enjoy layer upon layer of vegetable goodness in this scrumptious savoury tart recipe!



  • Pulse the flour and salt in a food processor followed by the butter until the mixture resembles coarse meal. Drizzle with vinegar and ice water and mix until a shaggy dough comes together.

  • Turn out the dough onto a clean worksurface dusted with flour and knead. Pat the dough into a ball and wrap in clingfilm. Place in the fridge for 2 hours.


  • Toss the tomatoes, courgette, garlic and 1 teaspoon of salt in a bowl. Leave for 5 minutes.

  • Roll out the dough onto baking paper, place on a baking tray and scatter cheese over the dough and arrange the veg on top.

  • Fold the edges of the dough over the veg, brush with the beaten egg and sprinkle salt and pepper on top. Freeze for 10 minutes.

  • Preheat the oven to 200C, sprinkle chives on top and place in the oven for 55 - 65 minutes or until golden brown and serve!
