Hearty Bean Stew

For those cold winter evenings, tuck into the ultimate comfort food dish!


  • Drizzle the olive oil into a casserole dish and heat. Add the onion and sauté for 2 to 3 minutes, stir in the sweet potato, pepper, cumin, coriander and chilli and sauté for 3 - 4 minutes.

  • Add the kidney beans, black-eyed beans, tomatoes, vinegar, vegetable stock and frozen peas and simmer for 20 to 30 minutes.
