Gnocchi Stars

These gnocchi stars are served with a vegan creamy mushroom and cranberry sauce!



  • Peel, cook and mash the potatoes. Mix the flour and salt into the mashed potato and knead for 1 - 2 minutes until well incorporated.

  • On a clean work surface that's lightly dusted with flour, roll out the dough (around 0.5mm thickness) and cut out star shapes.

  • Heat water in a pan and bring to a boil, carefully add the gnocchi and cook until they float to the surface (less than 1 minute). Repeat until all the gnocchi is cooked.


  • Heat some oil in a pan, add the sliced mushrooms and sauté until cooked. Add the butter and mix to melt.

  • Sprinkle in the cranberries and add more butter to make the sauce creamier. Add the gnocchi to the pan and mix.

  • Season with salt and pepper to serve.
