Combine the sugar, honey, water, cinnamon and fresh chopped figs to a saucepan and heat for 10 minutes while stirring until the sugar dissolves and the figs begin to soften and break down. Add the thyme and remove from the heat. Leave to infuse for an hour then strain.
Fill a glass with ice, add the gin, fig syrup, lemon juice and cider. Top with tonic water and garnish with a sprig, fig and cinnamon sticks.
