This easy oven roasted veg is great for meal prepping healthy lunches for the week ahead or as a nourishing side to any dish!
Preheat the oven to 220C, add the vegetables to a baking tray then drizzle with oil. Season with salt, pepper, Italian seasoning, garlic powder and parsley then toss to coat.
Arrange the veggies into a thin layer and bake for 15 to 20 minutes, stirring halfway through cooking. The veg should be tender and lightly browned. Remove from the oven and serve.
