Get this classic Italian soup on the hob for an oh so satisfying supper!
Add the oil to a large pot. saute the onion, carrots and celery for 5 minutes then add the remaining ingredients (except the spinach) and bring to a boil. Cover with a lid and leave on a low simmer/gentle boil for 20-25 minutes stirring occasionally.
Once the veg is tender and the pasta is cooked add the spinach, stir, cook for 5 minutes and serve!
