Coconut Thai Curry Soup 🍜

The whole family will love this recipe that’ll you be making it time and time again and it only takes 20 minutes to whip up!


  • In a large pot heat some of the vegetable broth. Add the minced garlic and fry for around 3 minutes.

  • Add the broccoli, carrots, bell peppers and onion and fry for 2 minutes.

  • Mix in the curry paste, fenugreek and curry powder and season with salt and pepper. Pour in the coconut milk and vegetable broths followed by the rice noodles. Cook for 8 more minutes and serve!
