Perfect for any occasion, this coconut and orange drizzle loaf is deliciously simple!
Preheat the oven to 160C, line a loaf tin with baking paper, cream the butter and sugar together in a mixing bowl and beat the eggs together in a jug.
Add the eggs to the recipe a little at a time and stir in some of the flour. Fold in the coconut and flour, pour in the milk and beat the mixture.
Pour the mixture in to the prepared loaf tin and sprinkle with left over desiccated coconut. Place in the oven for 50 minutes or until golden brown and baked through. Leave to cool for 10 minutes before removing from the tin and leaving to cool on a wire rack.
Combine the icing sugar and the juice of one orange and drizzle on to the cake once cooled completely. Top with the zest of one orange and decorate with dried orange slices.
