This starry night salad makes a delicious centrepiece at any Christmas table!
In a small bowl whisk together minced garlic, champagne vinegar, Dijon mustard, honey, salt and pepper. Slowly drizzle in olive oil; whisking continuously.
Carefully cut out star shapes from a red bell pepper.
In a large bowl add the avocado, salad greens, almonds, feta, pumpkin seeds, orange segments and pomegranate seeds. Drizzle the dressing over the salad and toss to coat. Place the bell pepper stars on top and serve!
