Chocolate Mint Biscuits

There’s no better combo than chocolate and mint… especially when it’s in biscuit form!



  • Preheat the oven to 180C, in a bowl combine the butter, sugar and vanilla then sieve in the flour, baking powder, cacao powder and salt. Mix until a dough forms, roll into a ball and divide into small, equal sized balls.

  • Place them on a baking tray lined with baking paper, leaving enough space between each dough ball. Flatten with the palm of your hand and bake for 15 minutes then leave to cool.


  • In a clean bowl, combine the butter and icing sugar until pale and smooth. Add the vanilla extract, lemon juice and peppermint extract and beat until smooth and fluffy.

  • Join two biscuits together using one teaspoon of filling and store in an airtight container.
