There’s no better combo than chocolate and mint… especially when it’s in biscuit form!
Preheat the oven to 180C, in a bowl combine the butter, sugar and vanilla then sieve in the flour, baking powder, cacao powder and salt. Mix until a dough forms, roll into a ball and divide into small, equal sized balls.
Place them on a baking tray lined with baking paper, leaving enough space between each dough ball. Flatten with the palm of your hand and bake for 15 minutes then leave to cool.
In a clean bowl, combine the butter and icing sugar until pale and smooth. Add the vanilla extract, lemon juice and peppermint extract and beat until smooth and fluffy.
Join two biscuits together using one teaspoon of filling and store in an airtight container.
