Carrot & Chickpea Balti

A lovely mid week meal that can be thrown together in no time at all!


  • Heat the oil in a large pan, add the onion and fry for 3 - 4 minutes. Stir in the balti curry powder and carrots and cook for a couple of minutes.

  • Tip in the tomatoes, 300ml of hot water and the chickpeas, bring to the boil and then simmer for 10 - 15 minutes. Taste and add salt and pepper if needed.

  • Stir in the spinach leaves and serve with rice!
