Bloody BOOzie Halloween Cocktail

Combine the grated beetroot, the juice of eight lemons and sugar in a bowl, store in the fridge for an hour, stirring occasionally to dissolve the sugar.

Add 25ml of the beetroot lemonade into each glass followed by 50ml of Aperol and some ice cubes. Top with procecco and serve with a lychee and blueberry eye.
