Avocado Brownies

Time to earn some avocado brownie points!


  • Preheat the oven to 180C and line a brownie tin with baking paper.

  • Place the avocado in a food processor and pulse until smooth. Scoop the avocado into a mixing bowl followed by the cacao powder. Mix until you get a chocolatey paste.

  • Add the egg, sugar, maple syrup, butter and vanilla and mix until smooth. Stir in the flour, baking soda and salt.

  • Stir in the cacao nibs then spoon the mixture into the prepared brownie tray and bake for 30 minutes or until the top is set.

  • Leave to cool before cutting into squares.
